The Chickpea Flour Revolution

Traditional cookie dough recipes rely on all-purpose flour, but this Chickpea Chocolate Chip Cookie Dough skips the flour and is just as delicious. By substituting flour with chickpeas, the recipe is high in fiber, protein, and iron. If you are following a gluten-free or wheat-free diet, these also offer a great option for a dessert.

Chickpea Nutrition

Chickpeas, also known as garbanzo beans, are super nutritious. Including 1.5 cups of chickpeas instead of flour in this chickpea cookie dough adds 50g of fiber and about 60g of protein to the entire recipe (1). There is also research to support high plant-based protein intake in pregnancy can help reduce the risk of gestational diabetes (2)

Bananas as a Sugar Substitute

Using natural sweeteners like bananas increases fiber and nutrition. Because bananas are natural sweeteners, you also get the potassium benefit of the banana, which may help reduce muscle cramps. The combination of banana and dark chocolate chips makes the chickpea cookie dough a guilt-free treat.

Collagen Benefits

For extra blood sugar-friendly protein, I added 2 scoops of collagen protein powder to this chickpea cookie dough recipe. Collagen is known for its potential benefits for skin health and will help balance your blood sugars. Two scoops of collagen powder add about 18g of protein to this chickpea cookie recipe.

For the best results, take the time to cool the dough before adding the dark chocolate chips. This prevents the dough from getting too hot during the blending process. If you’re watching weight gain, you can also switch the peanut butter to a peanut butter powder like PBFit. Make sure to follow the instructions on the peanut butter powder bottle to make it into a paste, or the dough may look dry.

Chocolate Chip Chickpea Cookie Dough redefines what it means to indulge. By incorporating nutrient-rich chickpeas, natural sweeteners, and collagen, we’ve crafted a cookie that doesn’t compromise on flavor or health. Treat yourself to a cookie that delights your senses while nourishing your body. Happy baking!
